This is a quick and healthy vegan recipe. Just keep in mind to sauté everything in a big wok for a few seconds and that too on high flame.

Ingredients: (serves 3-4)
Bok choy 2 bunches
Salt to taste
Olive oil – 1 tbsp
Garlic – 1 tbsp(finely chopped)
Ginger – 1 tsp(finely chopped)
Spring onion – 1 (greens & whites separately chopped)
Soy sauce – 1 tbsp
Brown sugar – 1 tbsp
Vinegar/lemon juice – 1 tsp
Black pepper powder – 1/4 tsp
Red chilli flakes- a pinch
White sesame – 1 tsp (toasted)

Method:
-Cook washed bok choy in boiling water with 1 tsp salt for a minute, immediately strain and put it in ice cold water to retain its colour & crunch.
-Heat olive oil. Sauté garlic, spring onion whites & ginger for a few seconds each on high flame.
-Add blanched and roughly chopped bok choy to it.
-Add black pepper, chilli flakes, salt, soy sauce, sugar & vinegar to it.
-Finally sprinkle sesame seeds.
-Switch off the flame & serve hot!
