Broccoli stalk is high in fiber content, low in calorie and as Nutritious as broccoli florets, so why waste them!

I found the best use of the broccoli stalk as a soup. I would be more than happy to know your recipes of broccoli stalks…

Ingredients: (for 4-6 servings)
Stalk of 2 broccoli
Broccoli florets – of half a broccoli(optional)
Butter – 1 tbsp
Maida – 1 tbsp
Milk – 1 cup
Garlic – 1 tbsp(finely chopped)
Ginger – 1tsp(finely chopped)
Salt to taste(preferably rock salt for milk based dishes as per ayurveda)
Black pepper powder – 1/4 tsp
Red chilli flakes – a pinch to garnish
Cream – to garnish

Method:
-Blanch the broccoli florets. For that, boil enough water with 1 tsp salt, add washed brocolli florets to it, boil for 1 minute, remove and dip them in ice cold water for few more minutes to retain their colour and crunch. Save the water used for blanching.
-Pressure cook broccoli stalks for 5-6 whistles till they become soft.
-Strain the cooked stalks and save the water used in cooking these.
-Blend cooked broccoli stalks and some of the broccoli florets to a fine paste and keep aside.
-Now to prepare white sauce, heat butter in a pan, saute garlic, then saute maida, saute ginger, finally add milk, keep on stirring constantly avoiding any lumps, add black pepper powder,salt & cook it for a few minutes.
-Now add the broccoli stalk floret paste to the white sauce alongwith the stalk cooking/blanching water saved earlier. Cook for a few more minutes & then switch off the flame.
-Adjust the salt as per your taste and your soup is ready.
-Garnish it with cream, blanced broccoli florets & a pinch of red chilli flakes and serve hot!
