This one is the recipe for Super spongy idlis for navratri fast.

Buckwheat(kuttu)flour- 1/4 cup
Sago(sabudana)- 1/4 cup
Barnyard Millet(samak rice)- 1/2 cup
Sendha Salt to taste
Curd- 1/2 cup

Wash & soak sago and barnyard millet for 2 hours. Then, remove excess water and grind them to fine paste with curd. Keep this batter covered in a warm place for 8 hours to ferment. After that, mix in buckwheat(kuttu)flour with salt with a very light hand so as not to effect the bubbles formed in fermentation. The idli batter is ready.

FOR STUFFING:(mix all)
Raisins- 2 tbsp
Crushed Peanuts- 2tbsp
Curry leaves a few
Sendha Salt to taste
Roasted cumin 1/4 tsp

Pour half idli batter in a greased idli container, over it put some stuffing and finally cover with rest of the idli batter. Steam in boiling hot water for 10-12 minutes on high flame.

Fresh coconut- 1/2 cup
Roasted Peanuts- 2 tbsp
Green chillies- 1 to 2
Curry leaves a few
Sendha Salt to taste
Roasted cumin- 1/4 tsp
Curd- 1/2 cup

Grind these together to make chutney.
Enjoy the hot and spongy navratri vrat idlis with chutney and hot tea!
