Few things to keep in mind before starting:

  • Banana bread is a moist, sweet bread resembling a cake & prepared from mashed over ripe bananas belonging to American cuisine.
  • This, I have found, is one of the best way to consume over ripe bananas. Never try to use the unripe bananas for banana breads. In case you have to use the unripe ones, use them after baking them to convert them over ripe ones.
  • Make sure that all the ingredients, used in the recipe, are at room temperature.
  • Measure all the ingredients in measuring cups & spoons levelled to the brim, neither more nor less, just the exact quantity as is there in the recipe.
  • Whisk the wet ingredients very well using hand whisk or electric whisk for 5 minutes to incorporate air inside the wet mix.
  • Dry ingredients are then mixed with the wet ingredients lightly using cut & fold mixing technique. Do not over mix at this stage.
  • Pour the prepared batter in a greased baking dish. To know how to grease a baking dish, you may refer to my video of Eggless Basbousa cake.
  • I generally use borosil containers for baking as they are the healthiest ones to bake into. I have used a bread loaf container here but you may use a square or round baking dish too.
  • Always preheat the oven as well as the empty greased baking dish before putting in the cake batter to bake.
  • The oil should be neutral flavoured one like olive oil or sunflower oil. You may replace oil with 1/2 cup of butter in the recipe to make it even healthier and tastier.
  • This recipe is lightly sweetened. You may increase the quantity of sugar by 2 tbsp more in case you prefer to have very sweet cakes. I have used jaggery powder for a healthier version, you may use sugar instead.
  • I have used 1:1 ratio of wheat flour to all purpose flour in this recipe. You may experiment with full wheat flour or full all purpose flour in the same recipe.
  • Walnuts taste the best in banana breads. You may even add sunflower seeds or pumpkin seeds or even chocolate chips for a change.
  • In case you want to make it in cocoa flavour, then you may replace 4 tbsp of flour with 4 tbsp of unsweetened cocoa powder in the same recipe.
  • Generally it is baked in oven at 180 degree C for 40 mins. But I bake all my bakery items in my microwave only and I am really satisfied with the results too. So with lots of experiments, I have found a series of both microwave mode & convection mode works the best for me while baking cakes, cupcakes and breads. You need to experiment and find out your best combination.
  • Banana bread can be stored in refrigerator in air tight container for a week.

Ingredients:

  • Whole Wheat flour – 3/4 cup
  • Maida / All purpose flour – 3/4 cup
  • Baking powder – 1 tsp
  • Baking soda – 3/4 tsp
  • Cinnamon Powder – 1 tsp
  • Salt – a pinch
  • Over ripe bananas(medium sized) – 4 (for batter) + 1 (for topping)
  • Warm Milk – 1/3 cup + 2 tsp
  • Lemon Juice – 2 tsp
  • Jaggery Powder – 1/2 cup
  • Neutral flavoured oil – 1/4 cup + 2 tbsp
  • Vanilla Essence – 1 tsp
  • Walnuts – 4 tbsp

Method:

  • Add lemon juice to warm milk and keep it aside.
  • Mash 4 bananas in a mixing bowl. Add jaggery powder, oil, milk-lemon juice mix & vanilla essence to the bowl and whisk them well for 5 mins in one direction only using an electric beater or hand whisk. This makes our wet mix.
  • Sieve whole wheat flour, maida, baking soda, baking powder, cinnamon & salt directly over the mixing bowl containing wet mix.
  • Now mix all with a light hand using cut and fold method till you get a smooth batter. Do not over mix at this stage.
  • Finally add walnuts to the batter.
  • Pour the batter in a greased preheated baking dish, tap it a bit to remove any entrapped air bubbles. Top it up with a banana slit horizontally. Do not press it down as the bread will itself rise while getting baked.
  • Bake it in a preheated oven at 180 degree C for 40 minutes. The baking time may vary with various ovens or with various different containers.
  • I have baked this bread in microwave mode first for 3 minutes on full power, then switched to convection mode at 180 degree C for 35 minutes.
  • Let it cool down to room temperature. Finally, loosen the sides, de-mould it and slice it.
