Few things to keep in mind before starting to make the creamiest, lightest and fluffiest hummus:

  1. Over cooked chickpeas : Over cooked & mushy chickpeas will make the hummus creamier. Do remember to cool down the boiled chickpeas to room temperature before grinding.
  2. Homemade Tahini : All the readymade tahini are not good enough to make the best of hummus. So, use the homemade one and it’s pretty easy to make it as well, even easier than our Indian Pudina chutney. And, do not compromise on the quantity of the tahini used while preparing hummus.
  3. Mellow down the Garlic : Mellow down the harsh and raw flavour of garlic by blending it with salt and lemon juice first of all and then let it rest for a few minutes before adding further ingredients.
  4. Freshly squeezed lemon juice : Use only fresh lemon juice to make your hummus taste fresh and delicious.
  5. Ice-cold water : Use ice-cold water while grinding sesame seeds as well as chickpeas to make a light coloured and fluffier hummus.

Ingredients :

For Tahini (1/2 cup) :

  • Sesame seeds (toasted lightly) – 1cup
  • Olive oil – 2 to 4 tbsp
  • Salt – 1/4 tsp
  • Ice-cold water – 2 to 4 tbsp

For Hummus (2.5 cup) :

  • Cooked chickpeas – 1.5 cup
  • Lemon juice – 1/4 cup
  • Tahini – 1/2 cup
  • Garlic cloves – 4 small Indian garlic cloves
  • Olive oil – 2 tbsp
  • Ground cumin (roasted) – 1/2 tsp
  • Salt – 1/4 tsp
  • Ice-cold water – 2 to 4 tbsp
  • Red paprika / deghi mirch – to sprinkle on top
  • Green Coriander leaves – to garnish

Method :

  • It’s a simple blender’s recipe. Just put garlic, salt and lemon juice to the blender and blend. Let it sit for a few minutes before moving further.
  • Then add toasted sesame seeds, olive oil and ice cold water to the blended garlic mix and blend it until you get a smooth and silky tahini.
  • Now add overcooked chickpeas, olive oil and ice cold water to the blender having tahini in it. Blend all these for a few more minutes scrapping the sides in between to get the fluffy and rich hummus.
  • Garnish it with red paprika and green coriander leaves. Serve with Pita bread.
