Aalu poori is a dish which we as Indians can not resist to have once served in front of us, no matter how much health freak we might be.
Poori can be made a bit healthier by adding greens to it and can be made crispier by adding milk to it. In this recipe of mine I have used spinach but not milk. Adding milk instead of water to the poori dough will turn the poori really awesome, trust me.
Usually I am looking for recipes which are healthy yet tasty at the same time and both these are pretty difficult to combine in a single dish. And sometimes you want to satisfy your taste buds rather than following your health conscious brains🏃promising yourself with more workout for the day to compensate. So with that promise I too prepared poori bhaji today and am sharing the same recipe for you to try for. Let’s start..

Ingredients :

For poori:
Wheat flour- 1cup
Ginger- 1 inch piece
Spinach- 1/2 cup chopped
Green chillies
Salt to taste
Roasted Cumin powder-1/2 tsp
Turmeric powder-1/2 tsp
Coriander powder- 1 tsp
Garam masala powder-1/2 tsp
Carrom seeds-1/2 tsp
Oil- 1 tbsp
Extra oil for frying

For bhaji:
Potatoes- 4 medium sized
Salt to taste
Heeng- a pinch
Fenugreek seeds- 1/3 tsp
Cumin seeds-1 tsp
Coriander powder- 1 tsp
Saunf powder- 1 tsp
Red chilli powder-1/3 tsp
Green chillies
Ginger-1 inch grated
Turmeric powder- 1 tsp
Tomatoes-2 large chopped
Amchoor powder- 1/2 tsp
Garam masala powder-1 tsp
Kasoori methi- 1tsp

1.Roughly Chop the spinach and boil it for a few minutes. Add this boiled spinach with ginger and green chillies to a grinder and grind to a fine paste. You may use milk for making spinach paste instead of water in this step .



2.Sieve the wheat flour, add dry masalas to it and mix them with the flour. I usually add wheat bran, easily available in the market, to my wheat flour as well.


2.Make a well in the centre of the flour and add oil and mix it well with the flour. Now knead a stiff poori dough using the spinach paste already prepared. Keep it aside for sometime.



3.After sometime again knead the poori dough and make pooris out of it. Use oil to roll out the pooris instead of dry flour  and then deep fry them.



4.Let’s prepare the bhaji now. For that, boil the potatoes with a spoon of salt and roughly crush them a bit using a spoon and keep aside.


5.Heat some oil in a pan. Add Cumin seeds to it. Turn off the fire and add Fenugreek seeds, heeng, Turmeric powder, coriander powder, Saunf powder, red chilli powder, grated ginger and green chillies to it.


Turn on the fire and sauté these.

Then add tomatoes to it and cook this till the oil separate out.


6.Now add the potatoes along with salt and Amchoor powder. Add some water and let it simmer for few minutes till the gravy reaches to a nice consistency.Turn off the fire.


7.Finally add garam masala powder and Kasoori methi. You may use fresh coriander leaves in place of kasoori methi. Dry roast the Kasoori methi and crush it in ur palms before adding it to the bhaji. And for better results, use homemade garam masala.
